Located on Capitol Hill in the Trace Lofts building at the corner of 12th and Madison, Tavern Law is following the nationwide trend to serve their sips in Prohibition Era, speakeasy-like décor in order to truly showcase the cocktail, with its centerpiece a curved, fully stocked bar. They’ve recruited not only Seattle’s most talented mixologists, but also serious scholars and connoisseurs of the art of the cocktail. In keeping with true cocktail craftsmanship standards, they focus on handmade classics using traditional techniques and only the freshest ingredients, hand-squeezed juices, and house-made syrups and tinctures. With the evergreen junipers (where gin comes from) plentiful in the Pacific Northwest, what better to sample than “Sixpence Gin & Jam” featuring Hendrick’s Gin, lemon juice, Lillet Blanc, pink peppercorn simple syrup, Scrappy’s celery bitters, and housemade apple jam.
